An earlier company of mine: a Berlin precision-fermentation startup that worked on alternatives to palm-derived fats and oils.
We used microbial fermentation, with fruit waste and other sidestreams as feedstocks, to make fats for food and personal-care applications without leaning on the usual agricultural commodities.
Ambitious, exhausting, will do it again.
